Khao Neow Thai Sticky Rice with Mango

Ingredients
- 1 cup glutinous rice sticky rice
- 1 ½ cups water
- 1 mango ripe, peeled and sliced
- 1 cup coconut milk
- ¼ cup sugar
- ¼ teaspoon salt
- 1 tablespoon sesame seeds toasted (optional)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours, or overnight.1 cup glutinous rice, 1 1/2 cups water
- Drain the rice and steam it over high heat for about 30 minutes, or until tender.
- In a small saucepan, combine the coconut milk, sugar, and salt. Cook over low heat, stirring frequently, until the sugar dissolves. Do not let it boil.1 cup coconut milk, 1/4 cup sugar, 1/4 teaspoon salt
- Once the rice is cooked, transfer it to a mixing bowl. Pour half of the sweetened coconut milk over the rice and mix well. Let it sit for about 10 minutes to absorb the flavors.
- To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut milk. Sprinkle with toasted sesame seeds if desired.1 mango, 1 tablespoon sesame seeds
Notes
Adjust the sweetness to your preference by adding more or less sugar.
