Ingredients
 
 

  • 1 cup glutinous rice sticky rice
  • 1 ½ cups water
  • 1 mango ripe, peeled and sliced
  • 1 cup coconut milk
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 1 tablespoon sesame seeds toasted (optional)

Instructions
 

  • Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours, or overnight.

  • Drain the rice and steam it over high heat for about 30 minutes, or until tender.
  • In a small saucepan, combine the coconut milk, sugar, and salt. Cook over low heat, stirring frequently, until the sugar dissolves. Do not let it boil.

  • Once the rice is cooked, transfer it to a mixing bowl. Pour half of the sweetened coconut milk over the rice and mix well. Let it sit for about 10 minutes to absorb the flavors.
  • To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut milk. Sprinkle with toasted sesame seeds if desired.

Notes

For extra flavor, add a pandan leaf to the coconut milk while heating.
Adjust the sweetness to your preference by adding more or less sugar.
