Ingredients
 
 

  • 1 ½ cups Arborio rice
  • 1 onion small, finely chopped
  • 4 tablespoons unsalted butter
  • ¼ cup dry white wine
  • 4 cups chicken broth or vegetable broth, kept warm
  • ½ teaspoon saffron threads soaked in 2 tablespoons warm water
  • ½ cup Parmesan cheese grated
  • Salt and pepper to taste

Instructions
 

  • In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until soft and translucent.

  • Add the white wine and cook until it evaporates.

  • Continue to add broth and stir until the rice is creamy and cooked al dente, about 5-10 more minutes.

Notes
