Spaghetti:

  • 400 g spaghetti
  • ¼ cup extra virgin olive oil
  • 6 cloves garlic thinly sliced
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)
  • Grated Parmesan cheese optional

Side Salad:

  • 4 cups mixed greens
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved
  • ¼ red onion thinly sliced
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
