Grilled Salmon with Roasted Vegetables Recipe
A wholesome and hearty dinner featuring grilled salmon fillets served with a side of roasted vegetables.

Ingredients
- 2 salmon fillets
- 2 tablespoons olive oil
- 1 lemon sliced
- Salt and pepper to taste
- 2 cups mixed vegetables broccoli, bell peppers, zucchini
- 2 cloves garlic minced
- 1 teaspoon dried oregano
Instructions
- Preheat the grill to medium-high heat.

- Grill salmon for about 4-5 minutes per side, or until cooked through.

- Spread the vegetables on a baking sheet and roast for 15-20 minutes, or until tender and slightly charred.

Notes
For extra flavor, marinate the salmon in lemon juice, olive oil, and herbs for 30 minutes before grilling.
