Vegetable Soup with Fresh Herbs and Lemon

Ingredients
- 2 tablespoons olive oil
- 1 large onion diced
- 2 cloves garlic minced
- 2 medium carrots diced
- 2 stalks celery diced
- 1 medium zucchini diced
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 1 cup green beans cut into 1-inch pieces
- 1 large tomato diced
- 4 cups vegetable broth
- 2 cups water
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups baby spinach roughly chopped
- Juice lemon
- Fresh parsley chopped (for garnish)
Instructions
Prepare the Base:
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the garlic and cook for another minute, until fragrant.2 tablespoons olive oil, 1 large onion, 2 cloves garlic
Add Vegetables:

Simmer the Soup:
- Add the diced tomato, vegetable broth, water, bay leaf, thyme, basil, salt, and pepper. Finish and Serve:
- Remove the bay leaf. Add the baby spinach and stir until wilted. Stir in the lemon juice.2 cups baby spinach, Juice lemon
- Use an immersion blender to blend the soup slightly, leaving some texture. Alternatively, transfer half of the soup to a blender, blend until smooth, and return it to the pot.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.Fresh parsley
