Grilled Chicken with Roasted Vegetables

Ingredients
For the Grilled Chicken:
- 2 boneless skinless chicken breasts (about 6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste

- 1 cup broccoli florets
- 1 red bell pepper sliced

For the Garlic Mashed Potatoes:
- 2 large Yukon gold potatoes peeled and diced
- 2 tablespoons butter
- ¼ cup milk or more, for desired creaminess
- 2 cloves garlic minced
- Salt and pepper to taste

Instructions
Prepare the Chicken:

- Rub the seasoning mixture over the chicken breasts, ensuring they’re well-coated.2 boneless
Grill the Chicken:
- Preheat a grill pan or outdoor grill to medium-high heat.
- Grill the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and they’re nicely charred.
- Remove from the grill, cover with foil, and let rest for 5 minutes.
Roast the Vegetables:
- Preheat the oven to 425°F (220°C).

- Spread the vegetables in an even layer on a baking sheet and roast for 20 minutes, or until they’re tender and slightly browned.
Make the Garlic Mashed Potatoes:
