  • 2 chicken breasts boneless, skinless
  • 4 cups mixed greens lettuce, spinach, arugula
  • 1 cup cherry tomatoes halved
  • ½ cucumber sliced
  • ¼ red onion thinly sliced
  • ¼ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar

  • Season chicken breasts with salt and pepper. Grill over medium heat until cooked through, about 5 minutes per side. Let cool slightly and slice.
