Delicious Pancakes for a Logging Day

Ingredients
- 2 cups all-purpose flour

- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- ¼ cup unsalted butter melted
- 1 teaspoon vanilla extract
Instructions
Mix Dry Ingredients:

Combine Wet Ingredients:

Make Batter:
- Pour the wet ingredients into the dry ingredients and whisk until just combined. The batter should be slightly lumpy.
Cook Pancakes:
- Heat a griddle or frying pan over medium heat. Lightly grease with butter or oil.1/4 cup unsalted butter
- Pour 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown, about 1-2 minutes more.
