  • 2 lbs russet potatoes
  • 1 egg beaten
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 2 cups tomato sauce
  • ¼ cup grated Parmesan cheese

Instructions
 

  • Boil the potatoes in their skins until tender, then peel and mash them while still warm.

  • In a mixing bowl, combine mashed potatoes, beaten egg, flour, and salt. Mix until a dough forms.

  • Divide the dough into sections and roll each section into a long rope. Cut into 1-inch pieces.
  • Press each piece lightly with a fork to create ridges.
  • Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, then remove with a slotted spoon.
  • In a saucepan, heat the tomato sauce until warm. Toss the cooked gnocchi in the sauce.
