Homemade Gnocchi with Tomato Sauce Recipe
Soft, pillowy potato dumplings served with a rich tomato sauce and topped with freshly grated Parmesan cheese.

Ingredients
- 2 lbs russet potatoes
- 1 egg beaten
- 1 cup all-purpose flour
- 1 teaspoon salt
- 2 cups tomato sauce
- ¼ cup grated Parmesan cheese
- basil leaves Fresh, for garnish
Instructions
- Boil the potatoes in their skins until tender, then peel and mash them while still warm.2 lbs russet potatoes
- In a mixing bowl, combine mashed potatoes, beaten egg, flour, and salt. Mix until a dough forms.1 egg, 1 cup all-purpose flour, 1 teaspoon salt
- Divide the dough into sections and roll each section into a long rope. Cut into 1-inch pieces.
- Press each piece lightly with a fork to create ridges.
- Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, then remove with a slotted spoon.
- In a saucepan, heat the tomato sauce until warm. Toss the cooked gnocchi in the sauce.2 cups tomato sauce

Notes
For a richer flavor, brown the gnocchi in a skillet with butter after boiling.
