Traditional Ugali with Sukuma Wiki Recipe

Ingredients
For Ugali:
- 2 cups maize flour cornmeal
- 4 cups water
- Pinch salt optional
For Sukuma Wiki:
- 1 bunch collard greens sukuma wiki, washed and chopped
- 1 onion finely chopped
- 2 tomatoes chopped
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
Prepare Ugali:
- Boil 4 cups of water in a large pot.4 cups water
- Gradually add the maize flour to the boiling water, stirring continuously to avoid lumps.2 cups maize flour
- Cook over medium heat, stirring constantly until the mixture thickens and pulls away from the sides of the pot (about 10-15 minutes).
- Reduce heat and let it cook for another 5 minutes, stirring occasionally.
- Remove from heat and let it sit for a few minutes before serving.
Prepare Sukuma Wiki:
- Heat vegetable oil in a frying pan over medium heat.2 tablespoons vegetable oil
- Add the chopped onions and cook until they are soft and translucent.1 onion
- Add the tomatoes and cook until they soften and form a thick sauce.2 tomatoes

- Cook for about 5-7 minutes until the greens are tender but still vibrant green.

Serve:
- Serve the ugali hot, cut into slices or scoops, alongside the sukuma wiki.
Notes
Ugali can be made with different consistencies, depending on personal preference.
