Ingredients
 
 

For Ugali:

  • 2 cups maize flour cornmeal
  • 4 cups water
  • Pinch salt optional

For Sukuma Wiki:

  • 1 bunch collard greens sukuma wiki, washed and chopped
  • 1 onion finely chopped
  • 2 tomatoes chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Prepare Ugali:

  • Boil 4 cups of water in a large pot.

  • Gradually add the maize flour to the boiling water, stirring continuously to avoid lumps.

  • Cook over medium heat, stirring constantly until the mixture thickens and pulls away from the sides of the pot (about 10-15 minutes).
  • Reduce heat and let it cook for another 5 minutes, stirring occasionally.
  • Remove from heat and let it sit for a few minutes before serving.

Prepare Sukuma Wiki:

  • Heat vegetable oil in a frying pan over medium heat.

  • Add the chopped onions and cook until they are soft and translucent.

For a richer flavor, you can add garlic or ginger to the sukuma wiki.
Ugali can be made with different consistencies, depending on personal preference.
